Being a new mom, I’m drawn to things that are quick and simple. This especially applies to meals (except for on special occasions, of course). This meat loaf recipe is way easy and tastes great. We use the McCormick Meat Loaf Seasoning Mix for the recipe and we also add a few ingredients of our own to add a little extra crunch and flavor.
You Will Need (McCormick’s ingredients):
1 pkg. McCormick Seasoning Mix
2 lbs. lean ground beef or turkey (we used beef)
2 eggs, lightly beaten
1/2 cup milk
1/4 cup dry bread crumbsOR 1 cup soft bread crumbs (2 slices bread) *we used soft bread crumbs
1/2 cup ketchup, chili sauce or tomato sauce (optional) *we used tomato sauce and ketchup for dipping after it was baked.
What WE add:
1/2 green bell pepper, 1/2 red bell pepper, chopped
1 or 2 carrots, chopped
chopped onion (amount varies on preference)
1 Tbsp Worcestershire sauce
1.MIX all ingredients except ketchup, in large bowl until well blended. (Yup, get ready to get your hands dirty because you basically just dig in and squish it all between your fingers)
2. SHAPE meat mixture into a loaf. Place in foil-lined baking pan or 9×5-inch loaf pan. Top with ketchup, if desired. (We used the loaf pan, no foil. Also, when adding ketchup, take loaf out of oven about 10 minutes before it’s done, spread layer of ketchup on top of loaf and let bake the remaining time.)
3. BAKE in 375°F oven for 1 hour or until cooked through. (with our weird oven, it took maybe 10-15 minutes longer. cut into the middle with a knife to check if meat is brown to the bottom before serving)
Pretty simple, right? We served it along side somehome grown squash and zucchini from our garden, and some brown rice. I usually sauté the veggies in a little butter and I add some Worcestershire sauce, Italian Seasoning, a little garlic powder, salt and pepper. So good.
