Cheddar Baked Chicken

What to make for dinner?? We had a Tri-Tip and several pieces of chicken, both semi frozen. We had a few guests over visiting Mia for the first time, and it was getting late. Misty Google’d a chicken recipe over at and came up with Cheddar Baked Chicken. The recipe calls for skinless, boneless chicken breasts but we had legs and thighs.

After the company left Misty fed Mia and I started skinning the chicken (save a few calories) and mixing the ingredients.  A little of this ( flour, salt, pepper, and garlic powder)  and a little of that (egg, milk) and some of this (cheese, bread crumbs, cereal) and the next thing I knew I had three bowls full of ingredients and a big mess. After I removed the skin I dunked each piece in the flour, the egg dip, then the cheese mix and placed them in my buttered baking dish, then in the preheated oven for 40 minutes. I grabbed a box of Rice A Roni and started cooking that and then hopped in the shower. Mia was out cold for a few minutes, freeing up Misty to cut and then saute some Zucchini and yellow Squash.

Of course, “Little Mia Bug” woke up and was fussing by the time I returned to the kitchen so I comforted her and Misty finished up with the cooking.  Ten minutes later we had a really simple, easy to cook dinner…. and it was good! I don’t know about healthy, but it was tasty.

Start to finish the chicken took 50 minutes and was fairly easy to prepare.

You will need:

  • 3 skinless, boneless chicken breast halves – cut in half ( I used legs and thighs)
  • 2 tablespoons butter, melted
  • 1 tablespoon milk (we had Almond Milk)
  • 1 cup shredded Cheddar cheese
  •   1/4 cup butter, melted
  • 1 egg

Check your spice rack for:

  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper  ( of course I added a little more)
  • 1 teaspoon garlic powder (yup, I added a little more)
  • 1/2 cup Italian seasoned bread crumbs
  • 1 cup crispy rice cereal ( We used Rice Krispies)


  1. Preheat oven to 350 degrees F (175 degrees C). Coat a medium baking dish with 1/4 cup melted butter.
  2. In a bowl, mix the flour, salt, pepper, and garlic powder. In a separate bowl, beat together the egg and milk. In a third bowl, mix the cheese, bread crumbs, cereal. Dunk chicken pieces in the flour mixture, dip in the egg mixture, then press in the breadcrumb mixture to coat. Arrange in the prepared baking dish. Drizzle 2 tablespoons butter evenly over chicken. (oops, I didn’t do this. I added all the butter to the baking dish in step one).
  3. Bake 35 minutes (I set timer for 40 mins, and baked for a few extra) in the preheated oven, or until coating is golden brown and chicken juices run clear.
We served with rice and saute’d squash and we have enough for left overs. ;)
